Part 4/8 of my response to Anon asking about my daily diet.

Fourth Course: Roast Sweet Potatos and 8oz steak

  • 8oz ribeye steak (organic, grass-fed preferred, but USDA Prime is acceptable)
  • 1 large red onion, sliced
  • 1 Tbsp Unsalted Butter
  • 1 dollop crème fraiche
  • Mashed garlic
  • EVOO
  • balsamic vinegar

Season steak with oregano, garlic powder, salt while waiting for EVOO, butter, and garlic in stainless steel pan to warm to golden.  When oil starts to smoke (or butter starts to rend), add steaks and sear both sides to brown. Cook to desired doneness (medium-rare if you’re cool), then swap steaks for onion, reducing heat to slowly caramelize.  Serve with roasted Sweet Potato. Top sweet potato with crème fraiche for extra credit.
